Mock tuna salad!

When I juice, I do my carrots first! I save the pulp and mix it with diced onion, diced celery, chopped garlic, lemon juice and salt and pepper to taste. I then add some of my cashew mayo mix, let sit so the flavors can mingle! Great on your favorite raw breads, or on top of a salad!!
